Similar to my “Three meals and a whale” post, this is going to be random. Two experiences that don’t really fit in the rest of my narrative about Brandon’s birthday trip are our quick visits to Indiana and West Virginia.
Breakfast in Indiana
After our night in Louisville, Kentucky, we popped across the river to New Albany, Indiana, for breakfast at Toast on Market. It seemed like a good spot, based on TripAdvisor reviews, and I’m so glad I took the advice of strangers on the internet. ?Their breakfast sandwich is one of my favorite meals of 50 in 5 so far. If you want to make it yourself, here’s the recipe I adapted from their original menu item:
Indiana breakfast sandwich (serves 2)
- 2 T champagne vinaigrette (I buy Briannas brand)
- 1 t Dijon mustard
- 4 strips thick bacon
- 2 ciabatta buns
- 4 eggs
- Frisée or spring mix
- 2 T Gorgonzola or blue cheese crumbles
- Salt & pepper to taste
Mix vinaigrette and mustard together in small dish; set aside. While bacon cooks, slice and toast ciabatta buns. When bacon is crispy, prepare eggs to your liking (Toast on Market does over medium). Mix handful of frisée with Dijon vinaigrette and gorgonzola crumbles.
Assemble the sandwiches: bacon, eggs, salt & pepper, and frisée mix. If you can’t find ciabatta buns at your local grocery, toast works just as well! Note: My at-home version is below, but you can see the original sandwich on Toast’s website (scroll down to bacon & egg sandwich).
After breakfast, we walked along the river front before heading downtown for our tour at Angel’s Envy.
Dinner in West Virginia
To break up our drive on the way home from Kentucky, we stopped for the night in Charleston, West Virginia. After a sleepless night in an Airbnb, I was thrilled for the familiar comfort of a Marriott. I was hoping to walk around downtown and the waterfront a little, but it was dark, cold, and rainy by the time we arrived.
I chose Black Sheep Burrito for dinner and we filled up on guacamole, queso, and tacos before calling it an early night back at the hotel.
I think we owe it to West Virginia to return and try again. We both consider it our least favorite state so far. But, West Virginia is meant to be experienced outdoors! We didn’t stay very long, and had less than ideal weather during our visit. Maybe a return trip when we can experience the outdoors will make us more excited about the Mountain State.
